
New Hampshire is like Ireland in this regard: if you don’t like the weather, just wait a minute. Earlier this week it got cold enough at night that frost was possible. Yesterday reached the low 90’s and it’s almost as warm today.
I always enjoy a good salad, but when it’s hot I actually crave crisp, cold greens. Perhaps if I also craved them during our long winters, I might not have so many “someday” clothes in a guest room closet. These are clothes I say I’ll get into again. Someday.
In any case, I tried this from allrecipes, although there’s a nearly-identical recipe, right down to the dressing, in a cookbook inspired by the old Andy Griffith Show, one of my guilty pleasures. That one includes a sliced red onion in the salad. Your call. I think it would be stunning made with blood oranges.
By the way, I like a tangy dressing (and don’t need excessive sugar) so I cut the sugar in half and used only 3/4 the amount of oil, 6 TB in all. I also used one scallion, green and white parts, for the onion. It’s what I had on hand.
Spinach Salad with Oranges
1 (10 ounce) package fresh spinach, torn
1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh mushrooms
3 bacon strips, cooked and crumbled
Dressing:
3 tablespoons ketchup
2 tablespoons cider vinegar
1 1/2 teaspoons Worcestershire sauce
1/4 cup sugar
2 tablespoons chopped onion
1/8 teaspoon salt
Dash pepper
1/2 cup vegetable oil
In a large salad bowl, toss the spinach, oranges, mushrooms and bacon; set aside.
In a blender or food processor, combine the ketchup, vinegar, Worcestershire sauce, sugar, onion, salt and pepper; cover and process until smooth. While processing, gradually add oil in a steady steam. Serve with salad.

The dressing for this salad is a winner! The family raved when I made it. My spinach salad is a bit different — spinach, chopped egg, bean sprouts, mozzerlla, topped with crumbled bacon. Your dressing goes wonderfully. Thanks for sharing!
