
Sometimes the old ways are perfect. I’ve mentioned that I’m a sucker for kitchen toys and that includes tools as well. This long-handled old tool is a favorite when I’m making something small, as I did today — six dark chocolate cupcakes, which I’ll post tomorrow. I got it many years ago in New York and a few months later, someone asked Cook’s Illustrated to identify their yard sale find. The reply was:
This item is usually called an English cake mixer or cake whisk, and has been made in Great Britain for more than one hundred years. The open wire blade allows more air to be incorporated into batters than a closed wooden or metal spoon. Therefore, this tool is especially useful when beating air by hand into cake batter or meringue.
When even a hand mixer or balloon whisk is overkill, I reach for this.

Sheila – I’ve had mine so long I can’t remember where I found it, Bridge Kitchenware perhaps. They are difficult to find, so I’d suggest trying the following in this order: Fante’s, King Arthur (both are on my Useful Links page) and vermontcountrystore.com. You might also try Amazon.
