Storing and keeping food

There’s always something to learn. I did not know pure maple syrup can be kept in the freezer.

I learned that tip from Good Housekeeping online, which has a wonderful three-page, printable chart of the best ways to store food and for how long. There are separate pages for dry goods, condiments and perishables.

I’ve long followed advice to keep whole wheat flour and other grains in the freezer, because they go rancid rather quickly. And despite GH’s advice not to refrigerate potatoes, I do. In New York a sack of spuds kept beautifully at room temperature for about six weeks; here, they almost start to sprout on the ride home. I hesitated to refrigerate them but read in Cook’s Illustrated a couple years ago that their testing found no real difference in taste when kept in the fridge, and that’s been my experience too. Your call, as always, but I’d love to know if anyone else refrigerates them.

We do not store our potatoes in the fridge. Instead we store our potatoes, carrots (other root vegetables) in 5 gallon plastic buckets. We nestle them in kiln dried fir (not hemlock or cedar) sawdust and we keep the buckets on our covered porch. It’s cold on our porch but it rarely ever freezes and if it looks like it will, then we bring the buckets into an unheated room at ground level.

I refrigerate my potatoes, too. I never noticed a difference in flavor but there is a huge difference in shelf life.

Love the new look of the site! I use Safari and Flock and it reads well on both platforms.

Huge difference, that’s my experience too. I don’t know why some of the produce here is so meh. Granted, it’s less expensive than the perfection I bought in Manhattan, but we’re next door to Maine; you’d think spuds would last.

Glad you like the new look! Still some growing pains but I do a little a time and learn a little at a time. I saw an NPR widget that made me think of you. :) And thanks for the browser information. Safari doesn’t always play well.

@brightfeather – That’s a good idea. I wish I could do that, but it’s way too cold here. I am able to chill wine quickly, however, by parking it in the snow!
