on Feb 24th, 2008Debate night fruit dip

Four ingredients, one fabulous dip for cherries.

What’s not debatable is how delicious this four-ingredient dip is. It was served Thursday night at a little gathering to watch the debate. I asked for the recipe faster than you can say “senator” and stopped on the way home for a bag of frozen cherries.

This dip is ideal for cherries because it has almond extract in it and there’s a natural affinity between almonds and cherries, just as there is with blueberries and orange. I’m already thinking no-bake pie filling here, with orange liqueur and blueberries. It’s that good.

While I did use full-fat sour cream, I opted for reduced-fat cream cheese with no loss of flavor or texture; it’s still wonderfully smooth. You could make it with a blender or a mini-chop, as I did, or with a simple wooden spoon. That’s a full recipe in the photo, fitting perfectly in a custard cup.

By the way, there’s another debate Tuesday night from Cleveland on MSNBC.

Creamy Dip for Cherries

3 TB powdered / icing sugar
3 TB sour cream
3 ounces cream cheese, reduced fat is fine
1/4 tsp almond extract

Sweet cherries

By whichever method you choose, beat together the four ingredients until well-blended and smooth. Serve with fresh or defrosted cherries. Finger licking optional!

Well, what’s not to love. Sweet, creamy, easy.

I have copied to my ella recipes cook book, on the hard drive.

Thanks for stopping by! It is delicious, and anytime I can skewer a piece of fruit on a toothpick and dip it into calories I don’t need, I’m smiling. :)
