How to: shape bread dough

I just wrote, in a recipe, “form into baguettes” and remembered not everyone knows how to do that. If a picture is worth a thousand words, a video can be worth 10,000. So I checked some and found this one, which is both short and excellent.

He’ll show you how to shape rolls, baguettes and batards, ovals and rounds (boules), followed by the final shaping of all but the rolls. You’ll notice he does not use a baguette pan — nor do I — and you don’t need one. If you have one, fine, but you don’t have to buy one and you certainly don’t need to spend $22 on a couche for the final rise after shaping them. It’s just a glorified kitchen towel and is one of many unecessary bread making “toys.” A cookie sheet and parchment are all you need.
