Thanks, Muse! Between seders and Easter dinner, it’s just one big food fest around here. Oy, matzah brei…its motto must be Clogging Arteries One Year at a Time. Hee!
Yes, perhaps traditionally that’s true. But not the way WE make it: Whole wheat matza; some water, some “Best o’ the egg” or whatever it’s called—you know the “real egg but lite” liquid in a carton?—to moisten; some finely chopped onion, and a LIGHT coating of olive oil in the pan. The eggy-stuff holds it all together. A little salt and pepper and we’re done. Yum! Reasonable amount of calories!
