Most of us who took the poll on whether we baste turkeys do not baste, but if you remove the people who used to but no longer do, the basters win out. Here are the results:

Since I’m in the 33% who don’t baste anymore, it’s only fair that I post a photo of last week’s holiday bird, brown and crisp. I rubbed it with a simple compound butter seasoned with salt, pepper and rosemary and I always keep the breast covered until the final hour.
